Our Story
We’re a Kansas City family.
KC Pancake Co. started as a holiday gift. One year we packaged our pancake mix and gave it to our family. You always want to give everyone something so they know you’re thinking of them, and this was what we could afford. Our boys were burning through pancakes at the time, so the mix was already dialed in.
The reviews came back raving, so we decided to package it for real.
How we grew
Our first store was Side Pockets in Lenexa, where you can still order our pancakes for weekend breakfast and grab a bag of mix to take home.
Next came the Lenexa Farmers Market. Getting our mix in front of KC families has always been the goal, and the markets let parents try before they buy.
From there we grew one Hy-Vee store at a time, then added the Overland Park Farmers Market when it opened at the newly renovated Clock Tower Landing. In October 2026, we delivered our first products to Made in KC.
Doing it right
We dreamed up this business on our porch that first holiday season. If it was going to take hours away from our family, we decided, it had to be done right. So we made two commitments:

ingredients wherever we can, so our growth helps other KC small businesses grow too.
We want to set an example for our kids while lifting up our community.
